Frozen hand-flipped prata and curries for your freezer
Browse

Hand-stretched and frozen flat. Four minutes from freezer to plate.
Egg folded into the layers before freezing. Richer, and no cracking required at home.
Sliced onion worked through the dough. Sweeter and a little more fragile.
Small, thick and chewy. What the children always ask for.
Tamarind-sour and medium-hot, with okra and tomato. Cooked down over two hours.
Yellow dhal with curry leaf and a mild tempering. Vegan.
Ten plain prata, six egg prata, and one tub each of fish and dhal curry.
My father flipped prata for twenty-eight years. We stretch the dough the same way — by hand, until it's thin enough to read through — then freeze it flat so you can cook it in four minutes at home. The curries are cooked the long way and frozen in portions.

How do I cook it?
Straight from frozen onto a dry, hot pan. Two minutes a side, then clap it between your palms to loosen the layers.
How long does it keep?
Three months frozen. Don't thaw before cooking — it'll go stodgy.
Is the curry spicy?
The fish curry is medium-hot, the dhal is mild. Both come in 500ml tubs.
Is it halal?
We aren't certified, but there's no pork, lard or alcohol in anything we make.
